My favourite part of winter is curling up under a blanket on the couch with a bowl full of warm, caramelized cinnamon apple, crispy, buttery, golden crumb & thick, melt in your mouth, warm vanilla custard. If this sounds like your ultimate winter night in too then you’re definitely in the right place because we have this simple, delicious recipe below.

For those of you making your own baby food, this recipe can be adapted for a healthier meal option for your little one once they have been introduced to solid food. Simply remove the sugar from the apple filling and purée once cooked. It can be served warm or cold. For a healthy sweeter option replace the Granny Smith apples with Pink Lady apples.

*Ingredients:

Filling
800g pink lady apples peeled, cored & cut into chunks
1/2 cup white sugar
2 tbs water
1 tsp vanilla essence
1/2 tsp cinnamon

Crumble
1/4 cup quick oats
1/4 cup wholemeal flour
2 tbs brown sugar
2 tbs butter, softened, cubed
1/4 tsp cinnamon

Method:
Preheat fan-forced oven to 190 degrees (I use the oven/grill function for a crispier golden crumb)

Peel, core & cut apples into chunks
Combine apple, sugar, cinnamon & water in a medium saucepan & simmer on low for 8-10 minutes until the apple is soft. Stir occasionally.

Meanwhile, combine oats, flour, sugar, cinnamon & butter in a bowl. Mix with fingertips until the mixture becomes a crumbly texture.

Drain apple mix & spoon evenly into 4 deep ramekins to approximately 2/3 full. Sprinkle crumb over top of apple & place in the oven for 10-15 minutes until crumb is golden.
